Coming up with things to make with a giant bag of deliciously sweet smelling pink grapefruits from my friend Lindsey and her husband Charlie's yard was a little less intuitive than when we got the generous neighborly gift of lemons last month. After a little research (and eating a few just all on their own since they are so incredible!), I decided to try salmon with grapefruit and avocado salsa and a grapefruit yogurt cake.
The salmon was really delicious. I forgot to buy a jalapeno for the salsa and used a mild chili powder on the fish, and I think upping the heat with those two would be excellent additions next time to create a more sweet and spicy flavor. But, the salsa with the salmon was super tasty anyway.
The cake was also fantastic. Really moist and tasty. The aroma after it baked was amazing, and the cake lived up to the smell!
Next up is going to be a grapefruit cocktail! I promise to report back!
sasa just picked the rest of the grapefruit off of our tree yesterday - which means i have a HUGE bucket full waiting for me. i have a grapefruit yogurt loaf cake recipe (different than yours, but probably the same in the end) - also on the menu is grapefruit curd and some grapefruit ginger marmalade - so we can enjoy them for the rest of the year. nom!
