Happy Thanksgiving!

It's turkey day in Canada!  Happy Thanksgiving to everyone at home and to all the other Canadians living abroad.

I have made Canadian Thanksgiving Dinner ever since we moved away from Canada.  Several times in NY and I even made it once for us and Chris the year he moved to Boston.  I need to find the photo of how hard Roy and Chris worked while I slaved in the kitchen that day.  Check in over the next couple days and I promise to add it in!  This was my first time making it in potentially 90 degree weather, however.  Luckily, the weather cooperated and really cooled off yesterday to make it feel very fall-like (tomorrow we are going back up to the 90s).  So, we had turkey dinner last night (and leftovers tonight, of course!), complete with PUMKPIN PIE!


Pumpkin pie wasn't always the obvious dessert of choice for Roy.  I had to convert him into a pumpkin pie fan.  When we first met, he couldn't imagine pumpkin being eaten as anything other than a savory vegetable.  Now I am not so sure he could live without pumpkin pie (and my pumpkin cream cheese muffins and pumpkin scones!).  All the evidence was there this morning when I saw a big VERY large slice portion of the pie MIA!

For all you Americans looking for a pumpkin pie recipe for November, my recipe is simple and delicious.  I use the Libby's canned pumpkin (NOT pumpkin pie filling) and follow their instructions.  I make my own crust though.  My mom's recipe.  Combine 2 cups flour and 1 tsp salt.  Take 1/3 of this mixture and make a paste with 1/4 cup ice cold water and set aside.  Cut in 2/3 cup shortening (Tenderflake in Canada is apparently superior to Crisco here in the US) to the flour mixture and then use your hands to quickly mix in the paste to form a ball.  Split into two and roll into two pie shells/crusts.

  1. sigh. i'd MUCH rather have the torture of riley's armpit than the torture of looking at your gorgeous pie. i wanted so badly to make pumpkin pie for thanksgiving... but alas, no pumpkins, no canned pumpkin, no pumpkin pie filling...

    i saw someone mention elsewhere that they make thiers with carrots instead - a bit too late to make it in time for thanksgiving, but i'll give it a go for christmas perhaps?

    1. I hate to say it, but I really don't think carrot pie would taste the same!!

      I couldn't remember if I sent you pumpkin seeds or not. Guess I need to do that for next year!

  2. I made 2 pumpkin pies yesterday after cooking up a pumpkin the day before. We ended up with the 4 cups needed for 2 pies, plus 6 cups in the freezer for more pie and pumpkin dinner rolls.

    I haven't tasted the pie yet because we took one to the pot luck along with an apple pie and a savory zucchini dish. I decided I wanted to taste the apple pie and a plum dessert that someone else had made because I knew there was pumpkin pie waiting at home for me. I even polished the silver pie caddy that the pie plate sits in. What we didn't have was turkey with all the fixin's, but we will do that another day because we have a free turkey in the freezer. Overwaitea was giving them away with 10000 points...how many dollars do you think I spent in order to get that "free" turkey??
