Man Pleasing Chicken
I know, I know, not everyone has a man they need to please. But I didn't name the recipe. Blame someone else for that.
I think it pleased the little man in our house because I didn't make it for him! I prepared his chicken plain.
I think it pleased the big man in our house because I did all the prep work for him so that he could just play with out little monsters while I went for a haircut instead of having the sometimes-less-than-enjoyable task of entertaining them, answering all their questions, helping them with who knows what, and trying to create a meal all at the same time.
But, I am not so sure it was the runaway culinary success that Pinterest and the blogosphere would have you think it is. It was fine. Good. I'd make it again as a quick and easy meal, but it wasn't out of the world amazing or anything. It was actually a bit too sweet for me, if I"m being honest. I think if I make it again, I'd do some tweaking. Maybe some lime and something for some spicy heat. It has some potential to be much better, I think.
I did make something this week that was amazingly delicious though! Curried sweet potato salad.
My notes:
- I added in some dried cranberries along with the golden raisins.
- I forgot to grab some cilantro to throw in but it would have been good!
- I would have liked some red or green onion but I didn't have any.
- Go light on the mayo in the proportions in your dressing. You don't need much dressing for this salad and you don't want the may to overpower the other ingredients.
I want to try this, but...
ReplyDelete1) Dad doesn't eat sweet potatoes so I would have to cut the recipe in half and still eat it for more than one meal (which is fine with me);
2) Right now the only sweet potatoes at our store are gigantic. I prefer them to be smaller, but I might have to go with one of these monsters.

I had it for lunch the following 2 days. It held up well in the fridge and tasted great.
